Today, July 14, is National Mac and Cheese Day. And if you've ever wondered to yourself, "how can we improve Mac and Cheese?", this is the place for you! Mac Nation, located in Indian Hills, has a menu that includes 37 different creative and loaded types of mac and cheese.
The restaurant has a cozy vibe, with comfy couches to sit on and wall art to admire. It also boasts an open kitchen, where you can watch them create your cheesy masterpiece.
"Mac Nation Cafe’s interior, designed by Kiki Frisbie, mother, owner, and operator Alton McCullough reflects the hip and rustic sensibilities of the surrounding area while also incorporating an earthy, hippie vibe. The small, quaint restaurant offers much to observe for passers-by, and much more to enjoy with a welcoming atmosphere, good music, and an open kitchen to watch all the magic happen," says Mac Nation.
Each of Mac Nation's different types of mac and cheese are inspired by the comfort foods of different states, so you can enjoy a unique twist on tastes from all over the country—including the Philly ("philly cheesesteak - roast beef, sautéed onions and peppers, traditional cheese wiz and provolone cheese"), the Minnesota ("sheppard's pie - tater tots, ground beef and sweet cream corn"), and, of course, the Colorado ("homemade pork green chili (with a slight kick) topped with Mexican Cotija cheese").
And for the vegetable lovers, there are the Veggie Macs, such as the California, which has broccoli and cauliflower, and the Wisconsin ("5 cheese - feta, goat, blue cheese crumbles, cheddar and mozzarella").*
Mac Nation Cafe opened back in 2015 and has been a winner at the Taste of Evergreen three years in a row, and most recently, was the People’s Choice winner of the Denver Mac & Cheese Fest.
Mac Nation is located at 5510 Parmalee Gulch Road, Indian Hills, CO, 80454, making it a relatively quick drive from Denver, and absolutely worth a visit.
