Chipotle is launching a new product just in time for your January diet. Starting today, customers at all stores in the U.S. will be able to swap rice for a low-carb cilantro cauliflower rice. The cauliflower “rice” is made from grilled cauliflower and seasoned with lime, salt, and chopped cilantro. Cilantro-lime cauliflower rice will add $2 to the price of your burrito and only be available for a limited time. The quick-serve Mexican grill is also adding new variations of its lifestyle bowls as well. To incentivize customers to try cauliflower rice, Chipotle will waive third-party delivery fees for orders placed through the app and chipotle.com through Tuesday, January 11, 2021.
Chipotle developed cilantro-lime cauliflower rice in response to customers looking for a lower-carb option to rice. The veggie-based rice also syncs up with popular food diets like Paleo, Whole30®, Vegan and Keto. The company began testing cilantro-lime cauliflower rice in select markets over the summer.

Chipotle has also added four new lifestyle bowls, which can be ordered exclusively through the company’s digital platforms:
- Whole30 Bowl: Cilantro-lime cauliflower Rice, chicken, fajita veggies, fresh tomato salsa, and guac
- Keto Bowl: Cilantro-lime cauliflower rice, chicken, tomatillo-red salsa, cheese, and guac
- Vegetarian Salad Bowl: Supergreens lettuce blend, cilantro-lime cauliflower rice, black beans, fajita veggies, fresh tomato salsa, and guac
- Vegan Bowl: cilantro-lime cauliflower rice, black beans, sofritas, fresh tomato salsa, roasted chili-corn salsa, and romaine lettuce
You must include cauliflower rice with your order to get the delivery fee waived.
