Looking for something to slather on your English muffin in the morning? Look no further than this scrumptious lemon spread!

I love breakfast. It's my favorite meal of the day (since apparently dessert isn't considered a meal). I'm always looking for new ways to jazz up my usual go-to's though, so when my best friend introduced me to Trader Joe's Authentic Lemon Curd a while back, I was intrigued. 

Growing up I wasn't a huge fan of lemon, but over the years I've come to not only enjoy it but really desire it. My friend spread a layer on some pancakes she made, and I was instantly hooked. The thick spread is deliciously creamy, smooth, and full of flavor. I could easily envision myself sitting in a London cafe, drinking tea, and eating this on a scone.

According to TJ's website, it's actually imported from England where they've been exclusively making it for the Mothership for 15 years. I couldn't agree more that "a spoonful of the stuff has the power to brighten up breakfast, baked goods, and all sorts of sweets and treats in between." You can "Drizzle it on pancakes, or ice cream, or cheesecake. If you want to get fancy, whip up some heavy cream and fold it into the Lemon Curd for an almost-effortless tart or layer cake filling worthy of a royal afternoon tea."

The 10.5-ounce jars are $2.99 and are comprised of cane sugar, eggs, butter (milk), water, lemon juice concentrate, pectin, lemon oil, and citric acid. Their serving size is a tablespoon, but I won't tell anyone if you decide to live large during this quarantine.

I've personally never baked with the mouth-watering curd but, based on a quick internet search, you could easily use it for thumbprint cookies, lemon bars, cheesecake, and pound cake, to name a few options. 

Since lemon (to me at least) is the perfect spring/summer flavor, go wild. Most of us are home currently, so now's the time to experiment! Grab a jar on your next TJ's run, and let your imagination run rampant.
