Mark Shoemaker has been named executive chef at Violetto, the upscale restaurant at Alila Napa Valley resort in St. Helena. Shoemaker’s resume includes time at Michelin-starred restaurants Acadia and Elske in Chicago. The restaurant is launching new spring tasting menus inspired by the region’s microclimate and seasonal bounty.
