Just a month after shutting down inside West Ridge Mall, a Topeka eatery is back — this time serving its customers from a new food truck. Mr. Teriyaki — known for its chicken, beef and shrimp platters and more — opened as a food truck May 16. Owner Eric Alcantara said it has been a great but busy experience. Prior to Mr. Teriyaki opening as a food truck, it had been anchored at the mall for one year. "It's been really busy and people are coming. They were just waiting on it," said Alcantara. "They're saying they like the spot we're at and they're telling me not to move from here."

The new Mr. Teriyaki food truck can be found in the parking lot of Mexicali Mexican Restaurant at 2107 SE California Ave. Alcantara said Mexicali is family-owned, so there are no issues with being open next to a restaurant. Mexicali and Mr. Teriyaki specialize in different cuisine choices for customers. Mr. Teriyaki's menu includes such menu items as chicken, beef and shrimp platters, along with spring rolls, egg rolls and crab rangoons. Prices for teriyaki platters served with rice or noodles range from $10.75 to $14.75. Alcantara said although the food truck industry is still fairly new to him, he's still amazed by the number of people who have showed up to support him and buy a platter. He added that he's excited to be part of Topeka's food truck community. Tanesha Martinez, teriyaki sauce maker, said regular customers are who keep Mr. Teriyaki in business. "We've been busy everyday we've been here," Martinez said. "It's a lot of our regular customers and they love it and they were saying, 'We'll follow you wherever you go.'"
