Billy Sims Barbecue, the popular barbecue joint named after a well-known ex-footballer, is coming to Colorado Springs! Are you excited?
Billy Sims Barbecue is a franchised fast-casual chain named after the 1987 Heisman Trophy winner and National Football League running back. It will open it's first Colorado location later in March in northeast Colorado Springs. Franchisees Jeff and Kayla Hall, who relocated to the Springs from Oklahoma two months ago, are planning to open their Billy Sims Barbecue on March 31st. The restaurant will be at 3330 Austin Bluffs Parkway, west of Austin Bluffs and Academy. Billy Sims Barbecue is based in Tulsa, Okla. and was launched in 2004. They now have more than 50 locations, most of which are in Oklahoma. There are also locations in Kansas, Michigan, Missouri and Iowa, and the quickly-growing chain is looking at opening 10 to 15 more locations this year. The chain specializes in smoked meat including ribs, beef brisket, pulled pork, chicken and turkey. Their meat is all smoked for 12 hours over pecan wood. Other menu items include beans, potato salad, Mac and cheese, and other traditional sides. One thing you won't find, though, is any fried food.
A second Colorado location operated by a different franchisee will open in a few more months in Denver. The Halls are also looking into adding locations in Pueblo, Castle Rock and Monument, along with more locations in Colorado Springs.
The Austin Bluffs location will employ around 25 full- and part-time workers, and will be open daily from 11 a.m. to 9 p.m. The restaurant will have seating for around 50 people and offer carryout and catering. Billy Sims himself is set to come to the new restaurant and sign autographs on April 1st from 11 a.m. to 1 p.m.
