The cilantro-lime cauliflower rice will be available at select stores in two states.

Chipotle is testing a new product to appeal to health-conscious diners. Starting on July 15, visitors can switch the traditional rice in their meal with a new, low-carb cilantro lime cauliflower rice. The test product will be available in 55 stores in the Denver and Wisconsin markets. Made with the same ingredients as the traditional cilantro lime rice, the cauliflower version has only four carbs and fewer calories.

Cauliflower rice is part of Chipotle’s effort to add menu items for consumers on certain lifestyle diets. Earlier this year, the restaurant added a line of lifestyle bowls that include specialized bowls for Whole30, Keto, paleo, vegan, and vegetarian diets.

"To date, one out of three new menu item requests from Chipotle customers is for Cauliflower Rice," said Chris Brandt, Chief Marketing Officer. "We've answered the call from fans and created a better-for-you option that puts a delicious twist on our classic white rice recipe by using the same fresh cilantro and lime ingredients and culinary techniques.”

The cauliflower is grilled and seasoned with salt, cilantro, and fresh lime juice. Diners will have to spend $2 more to substitute cilantro lime cauliflower for rice. If the test product is successful in these markets, that would open the door for Chipotle to roll it out nationwide. Three other menu items—carne asada, supergreens salad mix, and queso blanco—were born from this same process.

Last month, Chipotle beefed up its mobile ordering software, adding a group order feature and an option for people to order via Facebook messenger. Fans will be able to find out which stores are offering the new cilantro-lime cauliflower rice by visiting the app on July 15, 2020.
