Indulge in your favorite desserts while sticking to a low-carb diet!
One of the hardest aspects of a low-carb diet is the lack of sweetness. Without many fruits or desserts or white bread, it can leave you craving sugar and lead to cheating or sugar binging. With 1 gram of sugar equaling one carbohydrate, sugar is the enemy. But don’t fret, there are low-carb snack solutions that are not only low-carb, but delicious.
These treats are not for those following the keto diet, but rather those trying to stick to a low-carb lifestyle (not no-carb).
Crunchy Peanut Butter Truffle Bomb (around 7 carbs)

Ingredients
- 1 cup peanut butter
- 1 tablespoon butter
- Shredded coconut (unsweetened)—the amount is up to you!
- 1/3 cup crushed almonds
- Semi-sweet chocolate chips
Directions
Mix peanut butter, butter, coconut, and nuts in a bowl with a spoon. Melt chocolate chips in a microwave-safe bowl and microwave for 1 minute to start. Stir until smooth. If not completely melted, heat for another 30 seconds and stir. Use a teaspoon to scoop up mixture and form a ball. Roll the ball in chocolate and place on parchment paper to harden. Enjoy!
Diet Root Beer Float (around 5 carbs)
Ingredients
- 1 can diet root beer or whatever diet soda you prefer
- 2 scoops frozen Cool Whip
- Whipped cream on top
Directions
Put 2 scoops of Cool Whip in a glass just as you would vanilla ice-cream. Add soda slowly and then top with whipped cream.
Chocolate-Covered Almonds

- 1 cup semi-sweet chocolate chips
- Almonds
Directions
Melt the chocolate chips in a microwave-safe bowl in 30 second intervals—stir until creamy (do not over melt), dip almonds with a spoon, and let dry on parchment paper.
Baked Peach (around 5 carbs)
Ingredients
- ½ peach
- Butter or coconut oil
- Low-carb granola (optional)
Directions
Spread the desired amount of butter or drizzle coconut oil on top of peach and cook in the oven at 350°F for 5-10 minutes to caramelize. Add a little low-carb granola (OldeMan blueberry/almond granola, for example) on top and you can recreate a pie sensory sensation for a few more carbs.
Low-Carb Peanut Butter Cookies (around 4 carbs)

Ingredients
- 1 cup peanut butter
- 1 egg
- 1 teaspoon Stevia
- 1 teaspoon vanilla extract
Directions
Preheat oven to 350°F. Mix all ingredients. Drop by rounded teaspoon on nonstick baking pan. Press each cookie flat with a fork. Bake for 10-13 minutes.
