A unique way to enjoy sushi!
We all know sushi makes for a great snack, especially when it comes in a more "portable" form. Allow us to introduce, the sushi burrito.
A sushi burrito is assembled like a sushi roll, with fillings of raw fish, rice, and vegetables, followed by a layer of rice. Then, it's all wrapped up in a tight roll of rice paper, soy paper, or nori (seaweed) sheets, in a similar form as a Mexican burrito.
Now, without wasting any more time, let's dive right in and show you how you can make a sushi burrito right at home!
How to Make a Sushi Burrito:
For the purposes of this recipe, we're going to be creating a chicken sushi burrito. (But, know you can fill your sushi burrito to your liking! It's completely customizable.)
This recipe comes from Healthy Nibbles and Bits. It takes about 30 minutes to make and can serve 1 to 2 people (makes 4 sushi burritos).
Ingredients:
- Sushi Rice
- 2 cups of uncooked short-grain rice, O 5 cups cooked rice
- 3–4 tablespoons sushi seasoning
- A pinch of kosher salt
- Chicken
- 1 1/4 pounds chicken breast
- A generous pinch of kosher salt
- 1 teaspoon chili powder
- 1 teaspoon cajun seasoning
- 1/2 teaspoon granulated garlic
- 1 tablespoon olive oil
- Guacamole
- 1 large avocado
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 1/2 tablespoon chopped cilantro
- 2 tablespoons chopped red onion
- 1/2 teaspoon kosher salt
- Vegetable Filling
- 1 small red pepper, seeded and sliced
- 1 carrot, peeled and cut to matchsticks
- 1 Persian cucumber, cut to matchsticks
- 4 sheets of roasted sushi seaweed (nori)
Instructions:
- Cook the rice according to package instructions.
- Once the rice is done, spread it onto a baking sheet to cool off. It takes about 15 minutes to cool, then pour the rice into a bowl and mix with sushi seasoning and a small pinch of salt.
- Next, it's time to cook the chicken. Sprinkle kosher salt, chili powder, cajun seasoning, and garlic on the chicken breasts, then heat olive oil in a pan over medium-high heat and cook chicken until they are no longer pink. (Best practice: the heat thermometer registers 165 degrees F.)
- Once the chicken has cooked, let it rest before cutting into strips.
- Prep the guacamole by mashing avocado and mixing it with the rest of the guacamole ingredients (listed above). Set aside.
- Now, it's onto the burrito part of the sushi burrito. First, grab your sushi mat and then take a sheet of roasted sushi seaweed—make sure the shinier side is facing down.
- Spread about a cup of cooked rice on top of the seaweed. You want the rice to cover the entire surface. Add about 4 strips of chicken an inch away from one end of the seaweed.
- Finally, spread the guacamole and top with the vegetables. Then, roll up the sushi burrito!
