This bright green chopped salad has taken TikTok by storm.

Whether you eat it with chips or just on its own, this vegan recipe is elevated to sublime by its fresh green goddess dressing. Food blogger Baked by Melissa has really hit it out of the park with this one. Yes, there's a long list of ingredients, but it's worth all of the effort!

I omitted two of the ingredients (shallots and chives) because I knew this would make a big batch. Over time, certain aromatics tend to break down and impart that dreaded sulfur smell, so I tend to leave them out if I plan on taking something for work lunches. Add them back in if you're all about the onion life.

Green Goddess Salad

Ingredients:

  • 1 small head of green cabbage, outer leaves removed
  • 4 small Persian cucumbers, washed and unpeeled

For the dressing:

  • 1/4 cup chopped walnuts
  • 1/3 cup nutritional yeast
  • 2 T. rice vinegar
  • 1/4 cup olive oil
  • 1 tsp. salt
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 cloves of garlic
  • 1 cup fresh basil
  • 1 cup baby spinach

Method:

Chop the cabbage and cucumbers into small, uniform dice. Visualize the consistency of commercial coleslaw and you get the idea. Set the chopped veggies aside in a large bowl or storage container.

The next part couldn't be easier. Dump all of the dressing ingredients into a blender and pulse until smooth. You may have to scrape down the sides with a spoon or thin it out with a bit of water if it looks too thick.

Add the dressing to the chopped cabbage mix, stir well to combine, and chill. This salad is great on its own, with more veggies as a salad topper, or with tortilla chips in lieu of dip.

Variations:

  • This recipe is just about perfect as is, but you can absolutely change up the vegetables you use as its base. Chopped sweet onions, corn kernals, or finely chopped celery would all taste great with the zingy dressing. Not a huge cabbage fan? Use some firm lettuce like romaine hearts, or even kale.
  • The original recipe called for the juice of two lemons, but I had a lime to use, so I went half and half. Besides being seedless, limes are a bit on the tarter side if you're into that. DO NOT use the pre-squeezed juice!
  • The idea behind the nuts is to provide a bit of body and creaminess. You can use walnuts, cashews, or even pine nuts in this recipe. Roasted nuts work, but so do raw.
  • Nutritional yeast adds an umami punch--don't skip this ingredient!
  • If you can't find Persian or mini cucumbers, use two large cucumbers instead.

The coolest thing about this salad is that it's intriguing. The first time you make it, you'll immediately start thinking about the changes you'd make the next time.
