Elevate your tater game with these quirky roasted potatoes.

This viral recipe is all over social media, and it's surprisingly easy to make. Here's a streamlined version, using both red potatoes and sweet potatoes.

Accordion Potatoes Recipe:

Ingredients:

  • 2 medium potatoes, washed and dried
  • 2 medium sweet potatoes, washed and dried
  • 3 T. olive oil, divided
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried oregano
  • 1/4 tsp. dried parsley
  • salt and pepper to taste

Method:

Preheat oven to 400 degrees. Prepare potatoes by cutting them lengthwise into slices about an inch thick. Peel each slice and trim roughly into rectangle shapes.

Here's the fun part! Place a bamboo skewer on each long side of your potato slice and score it horizontally. Flip and score it diagonally, still using the skewers as guides. Carefully run one of the skewers through the potato and slowly stretch it out to show the lattice pattern. Do the same with the sweet potatoes. It may help to slowly rotate the skewer as you push it in, creating a bit of a spiral.

Brush the potatoes on each side with half of the olive oil and season with all of the savory herbs. Brush the sweet potatoes with the remaining olive oil and sprinkle on some salt and pepper.

Bake for 25 minutes, flipping once after the first 20 minutes of cooking.
